Fruity & Spicy Salsa

Unlike most store bought salsas this one has a fresh, fruity, and a spicy kick to it. Well paired with almost anything. Inspired by mole I created this salsa with apples, prunes, tomatoes, and chilies. Bottle up for your condiment stash in the refrigerator and make it a go to salsa for every meal.

3 guajillo Peppers

3 dried prunes

1 apple, tart, pealed

5-6 whole tomatoes (San Marzano Whole Peeled Tomatoes), from a can

2 garlic cloves

1 teaspoon salt

1/4 teaspoon cumin

1 teaspoon Mexican oregano, crushed

It a stock pot fill 2 cups of water, bring to a boil. Shut off the heat and add the guajillo peppers and dried prunes. Allow to sit until soft.

Take a blender carafe and add the apple, tomatoes, garlic and softened guajillo peppers and prunes with 1 cup of their liquid. Blend everything until a smooth consistency. Pour into a pot and simmer to reduce for 15 minutes on medium heat. Add the oregano, cumin and salt to taste if needed. Once cooled add to a jar and keep in the refrigerator for up to 2 weeks. Enjoy!
