In our Blue Zone cooking class featuring Ikaria, Greece—an island famed for its high number of centenarians and laid-back lifestyle—we’ll explore dishes that reflect the island’s balance of flavor, tradition, and wellness. The menu begins with chicken stifado, a rustic stew simmered slowly with onions, tomatoes, and warming spices that highlight Ikarian simplicity. Next, we’ll make baked rosemary chickpeas, a fiber-rich and fragrant side that’s both satisfying and nourishing. A vibrant wild greens salad, inspired by the foraged horta common in Ikarian kitchens, showcases nature’s bounty with a drizzle of local olive oil. To finish, we’ll enjoy Greek-style honey donuts, a nod to the region’s joyful approach to life and celebration, made with wholesome ingredients and served warm with a touch of local honey.
