Southern Italy is known for its unique calzones. In Sicily, many people couldn’t afford to cook over wood so baking was expensive and inconvenient. Frying the calzones in virgin olive oil produces a fluffier texture than baked calzones. The oil lends an earthy perfume all its own. Thus was born a uniquely flavorful calzone you won’t soon forget. We’ll serve ours with a tossed green salad with a quick dressing we’ll make.
