Traditional Irish Soda Bread Recipe

A traditional Irish soda bread recipe that is moist and flavorful is achievable.  This recipe is quick to make and delicious, add fresh herbs at dinner and raisins for breakfast.   I’ve been told by friends it’s the best they’ve had.  Very moist and flavorful unlike others that were dry and bland.  I’ll tell you my secret, it’s the buttermilk from Grace Harbor Farms  in Custer, WA.   If this is not available at your grocer then choose a good quality from a local farmer.  Add seasonal herbs for a even tastier bread.

7 oz. of wholegrain flour

9 oz. of strong white flour

12 oz. buttermilk

1 tsp generous teaspoon of soda

1 large egg

1 tsp honey

1 handful of fresh herbs, fresh leaves like garlic or spinach roughly chopped

1/2 tsp kosher salt

Preheat oven to 375°.  Heat a 10” cast iron pan in the oven.  While it is heating combine the flour, baking soda, fresh herbs and salt in a bowl.  In a measuring cup measure out buttermilk and then whisk in the egg and honey. 

Make a well in the center of the dry ingredients, then pour the wet mixture into the center.  Add a little extra flour if the mixture is to wet.  Use a wooden spoon or a dough whisk, I find this works much better, you can find them online through Amazon, they will mix the dough gently, overworking will cause the dough to be tough.  Gently form the dough into a rough round and place into hot cast iron skillet.

Cut a deep cross in the top of the round, don’t cut through, then sprinkle with little flour on top and bake for 35 minutes. The bread is cooked when it reaches 190° to 200°.  You can also tape on the bottom, if it sound hollow it will be done.  Let cool a bit then slice with some rich Irish butter.
