Eggplant Crusted Pizza Dough
Eggplant crusted pizza dough, pizza that won’t make you feel guilty. Is there such a thing? Yes, and it is delicious. You won’t even miss the dough! Eggplant crust is a delicious alternative to traditional pizza. Eggplant makes a crust that is crisp when cooked brown. Top with cheese and olives or anything you like to make it your own personal pizza. If you want to go with a real crust you’ll have to try my Neapolitan dough or no-knead dough recipes.
2 large eggplants, slice
Olive oil
Kosher salt, and pepper
Mozzarella cheese
Grated parmesan cheese
*Your desired ingredients
Slice the eggplants in 1/4″ slices. Lay them in a circle overlapping one another. Sprinkle with salt and pepper. Grate parmesan over the eggplant. Drizzle a healthy amount of olive oil over the top of the slices. Bake for 30 minutes on 450 degrees until browned.
Remove the eggplant form the oven and spread pizza sauce over the eggplant leaving an edge. Top with cheese and other ingredients you like on pizza. Bake and enjoy!
