GF Vegan Double Chocolate Chip Cookie
Vegan and GF Cookie Perfection is…..
GF vegan double chocolate chip cookie, is decadent and surprisingly moist on the inside and crunchy on the outside. Because you are gluten free and vegan doesn’t mean you have to suffer with tasteless food that isn’t healthy or delicious at the same time. There is approximately 150 calories to each cookie, I think you can splurge.
1 1/4 cup almond meal
1/4 cup vegan dark chocolate, loosely chopped
1/2 cup finely grated unsweetened coconut
1/2 teaspoon baking powder
1/4 teaspoon kosher salt
1/3 cup organic brown sugar
1/4 cup unsweetened vegan cocoa powder
1/4 cup aquafaba (liquid from a can of garbanzo beans)
3 tablespoon coconut oil, melted
1/2 teaspoon vanilla extract
In your mixing bowl add the aquafaba and a small amount cream of tartar. Whisk until light and fluffy.
Add to the aquafaba the dry ingredients and mix to combine. Now the coconut oil, chopped chocolate and vanilla. Combine the ingredients and you will have a semi-tacky dough. Cover and chill for 30 minutes or overnight.
Preheat oven to 375 degrees. Scoop out 2 tablespoons of dough and form into a round ball. Place on a cookie sheet lined with parchment and press to slightly flatten.
Bake for 12 to 15 minutes. Cool and enjoy.
