These healthy breakfast recipes are going to make the morning your favorite time of the day.  Easy and fast to make when everything is chopped up small.  Fresh arugula gives a peppery bite and crunch that pleases the tastebuds. It is healthy full of vitamins and minerals with the staying power of protein in the egg. Takes all of 15 minutes to make, I think you’ll have that amount of time in the morning, don’t you?

4 yellow potatoes

4 mushroom any variety

1/2 cup fresh arugula

2 whole eggs

4 tablespoons grape seed oil

2 tablespoons olive oil

salt and pepper

Dice the potatoes and mushrooms into small cubes.  Heat a skillet over medium high, add 4 tablespoons grape seed oil, heat and add the diced potatoes.  Cook on medium high, letting them brown on each side before turning them over. Once they have browned add the mushrooms and another tablespoon oil. Sauté until the mushrooms are heated. Season with salt and pepper.  When the potatoes have cooked through transfer them to your plate. Mound the arugula over the potato/mushroom mix. Now fry your egg how you like it, over easy or sunny side up. Place the egg on top of the arugula, drizzle with olive oil and freshly ground pepper.  Serve
