Honey Mustard Chicken Recipe

This honey mustard chicken recipe is quite simple to prepare when you are lacking creativity at meal time.  Busy weeknights with kids and work leave you with little energy to create a fabulous dinner.  I’m here to help, by giving you fast and easy recipes that will satisfy even the picky eater.   This rich honey mustard sauce pairs nicely with rice or potatoes. From start to finish this recipe takes 30-minutes.  I like to serve this weekly with rice and some sautéed greens.  Healthy and satisfying meal that seems like you spent all day cooking.

Honey mustard chicken recipe

2 chicken breasts

6 mushrooms thinly sliced

1 shallot finely chopped

2 garlic cloves minced

2 tablespoons flour

2 tablespoon parsley chopped

2 tablespoon olive oil

2 tablespoon butter

1 tablespoon Dijon

1 tablespoon grain mustard

1 tablespoon soy sauce

3 tablespoon honey

1/2 cup chicken broth

2 tablespoon heavy cream

Combine the mustards, soy sauce, chicken broth, heavy cream, and honey in a small bowl set aside.

In a dutch oven over medium heat add the olive oil and butter, melt.  Add to that the mushrooms, shallots, and garlic, saute until the shallots are translucent.  Now add the chicken and saute for another 5 minutes until cooked through. Once the chicken is done sprinkle the flour over the entire contents of the pan and stir.  Allow the flour to cook a bit in the pan juices.  Now add the mustard mixture and chopped parsley to the chicken and stir to combine.  Bring it to a boil for a minute until it has thickened. Turn it down to a simmer.  You’re ready to serve with rice or potatoes.
