Old Fashion Molasses Cookie

There is nothing like a chewy, spicy molasses cookie. Not only for the holidays but for all year round.  Rich molasses and fresh ginger heighten the flavor and gives it a chewing cookie texture. You can add whole wheat flour for added flavor.

1 cup brown sugar

3/4 cup shortening

1/4 cup molasses

1 egg

2 1/4 cup all-purpose flour

2 teaspoon baking soda

1 teaspoon fresh ginger, grated

1 teaspoon ground cinnamon

1/2 teaspoon ground clove

1/4 teaspoon salt

Granulated sugar

Mix brown sugar, shortening, molasses and egg until fluffy. Add the in flour, baking soda, cinnamon, cloves, salt, and fresh ginger, Mix to incorporate. Cover and refrigerate for 1 hour.

Heat the oven to 375 degrees. Shape dough by rounded teaspoons into balls. Roll the rounds in sugar. Place balls about 3 inches apart on a lined parchment baking sheet. Bake until just set, 10 minutes. Immediately remove from baking sheet to cool.
