Old Fashion Dairy Free Caramel Corn
Oh, the memories caramel corn brings to my mind. Circus clowns, state fairs and I can’t forget summer nights. Caramel corn is loved by young and old. But, it may not be healthy for everyone. Compared to the Old Fashion Dairy Free Caramel Corn which has no fatty butter or refined sugar. Just the wholesome red palm oil, which gives it the fun yellow color, full of vitamins A and E. And coconut oil with no cholesterol, trans fat, carbohydrate gives a buttery flavor. The sweetness comes from the coconut sugar, maple syrup, and honey. Delicious flavor that satisfies my sweet tooth as memories of caramel corn dance around my mind.
Create some memories with this old fashion dairy free caramel corn that will be heart healthy for everyone.
1/2 cup popcorn kernels
1/4 cup coconut oil
1 tablespoon red palm oil
1/4 cup maple syrup
1/4 cup honey
1/4 cup coconut sugar
1 1/2 teaspoon kosher salt
1/2 teaspoon baking soda
1/4 teaspoon vanilla
- Line a baking sheet with parchment paper. Preheat oven to 250 degrees.
- Place the red palm oil and salt into a popcorn popper or deep pot with a tight-fitting lid. Add the popcorn and cover. Pop and shake until the popping slows, remove from popcorn popper into a large bowl.
- In a medium sauce pan, add the coconut oil, honey, maple syrup and coconut sugar. Bring to a boil over a high heat until bubbling. Turn the heat off and add the vanilla and baking soda, stir as you see it grown into a light-colored cloud, keep mixing.
- Pour caramel mixture over the bowl of popcorn. Mix well and spread out onto the parchment lined baking sheet. Bake for 30 minutes, stirring to make sure everything gets cooked evenly. Let cool for 20 minutes before eating.
