Oven Fried Chicken Recipe
Oven fried chicken recipe would make Granny roll over in her grave. Granny may be surprised that her method of frying chicken in a cast iron skillet has been replaced by the cookie sheet and hot oven. This healthy and simple fried chicken recipe takes the mess and work out of frying a chicken. Producing a crisp crust, while the meat remains tender and juicy, finger lickin’ good. Serve with a true Southern buttermilk biscuit here.
Try cooking in a fabulous cast iron sheet
1 cut-up organic chicken
1 cup buttermilk
1½ teaspoon kosher salt
1½ teaspoon ground pepper
1 teaspoon garlic powder
½ teaspoon paprika
2 cups all purpose flour
Place the cut up chicken, buttermilk, ½ teaspoon kosher salt, ½ pepper, garlic powder and paprika into a large bowl. Allow to marinade for 1 hour in the refrigerator.
Prepare the flour, 1 teaspoon salt and 1 teaspoon pepper into a large bowl and set aside.
Preheat oven to 450º
Now that the chicken has marinaded for 1 hour remove each piece and wipe most of the buttermilk off with your hand, then generously coat with the flour mixture, place onto a large parchment lined cookie sheet. Make sure they are not touching, this will ensure a crisp crust and even browning.
Bake chicken in a 450º oven for 30 to 40 minutes depending on the size of chicken pieces. Rotate chicken during baking for an evenly browned crust.
Serve with french fries and green salad.
