Cilantro hot Sauce Recipe (Fill-fill)
This Palestinian cilantro hot sauce recipe is a bright and intense condiment. You might call this a spicy cilantro and garlic sauce, because it is laced with a whole head of garlic. This hot chili sauce will rock your world. It is fast and easy to make, done in a matter of minutes. You can top a hamburger, an make a fiery sauce for a taco, or add piazzas to pizza. My husband puts cilantro hot sauce on everything from eggs to vegetables.
We call this Fill-Fill which means pepper in Arabic. This recipe was given to me by my Palestinian friend and consequently not a day goes by where it is not served.
1 large bunch of cilantro stemmed
1 head of garlic
1 teaspoon kosher salt
1/2 teaspoon pepper
1 – 2 jalapeno peppers or serrano pepper (adjust for hot tolerance)
1/4 cup olive oil
Place garlic, salt, pepper and hot peppers in a food processor bowl. Process until it is finely chopped. Add the stemmed cilantro and pulse until incorporated. In the feed tube pour the olive oil in while processing. Adjust salt and pepper. It will get hotter as it sits, beware.
