Chinese Congee with Youtiao Class

In this hands-on culinary class, students will learn to prepare traditional Chinese congee with youtiao, a beloved comfort breakfast that highlights the beauty of simplicity and texture. Participants will master the technique of slowly simmering rice into a silky, velvety porridge while exploring how starch transformation creates its signature consistency. We’ll top our congee with soft-cooked egg, herbs, and a spicy condiment (optional). The class also covers preparing and frying youtiao — golden, airy dough sticks — focusing on dough development, proofing, and temperature control for the perfect crisp exterior and hollow interior. By the end of the session, students will understand how the contrast in texture elevates a humble dish and gain insight into the cultural significance of this classic morning staple enjoyed across China and beyond.
