Bammers and Pebbs Carrots

Carrots and the health they bring can be flavorful and delicious. Quick spicy pickled carrots with jalapenos are a treat to accompany your sandwich or chips and salsa.

 

5 lbs. Carrots, peeled

1 cup Apple Cider vinegar

1 tablespoon Mexican oregano

2 cans of Jalapenos, and juice

 

 

 

 

Place carrots into a dutch oven and cover with water. Add the Cider, oregano, 2 teaspoons salt. Cook until the carrots are slightly tender. Remove from heat and allow to cool. Add the jalapenos with juice once cooled. Place into a container and store in the refrigerator for up to 1 month.
