Chicken Kebab with Yogurt Mint Sauce

Chicken kebab with yogurt mint sauce is delicious and simple to make for a party.  Summer time is BBQ season especially when the sun is shinning.   The BBQ’s get dusted off and the grills get scrubbed down.  Why not break out your skewers and start shish kebab’en!

Marinading the meat is an important step for flavor and texture.  For these chicken kebabs I use yogurt which adds moisture and tenderizes.  The calcium in dairy products activate enzymes in meat that break down proteins.

Did you know that the practice of kebab is ancient?  Traditionally it was thought that the dish was invented by medieval soldiers who would use there sword to roast their meat over an open flame.  What could be easier for your party, you’ve got your meat and veggies for each person on their own personal kebab skewer.  Served with my pita bread and hummus they  make a great accompaniment.

2 whole chicken breasts deboned

1 cup of whole greek yogurt

3 crushed garlic cloves

1 lemon juiced

2 tablespoon fresh mint finely chopped

1 teaspoon kosher salt

1/2 teaspoon white pepper

Cut the chicken into 2 x 2″ cubes and place in mixing bowl.  Add the yogurt, garlic, mint, salt and white pepper. Marinade the chicken for 3 hour or overnight.

Skewer the meat, keeping them from being pushed together. They should be sitting side by side and touching.
