Crazy Good Hummus
Let’s go crazy for this delicata squash hummus recipe! I’ve made a carrot, beet, parsley and now delicata squash hummus. It has a semi sweet earthy flavor. It pairs well with chicken as a condiment or a dollop on a hard boiled egg and you are in for a real treat.
The delicata squash is a good source of dietary fiber and potassium, as well as smaller amounts of vitamins C and B, magnesium and manganese. They are delicious roasted in the oven. They’re skins can be eaten when cooked until tender.
2 cups cooked delicata squash pulp
1/2 cup tahini
3 tablespoons fresh lemon juice
2 garlic cloves
3 ice cups
1/2 teaspoon kosher salt
1/4 teaspoon pepper
Cut the squash in half and remove the seeds. Place on a parchment lined baking sheet. Drizzle with olive oil and some kosher salt. Bake until tender, approximately 30 minutes.
When squash is cooled, remove the pulp and place into a blender along with the tahini, lemon juice, garlic, salt, pepper and ice cubs.
Process the mixture starting off on low using a tamper tool as it is turning to ensure everything is blended. Raise the speed and process until smooth.
Transfer to a plate, swirling it in a circular pattern as in the middle east. Serve
