GF Sourdough Banana Bread
Gluten-Free is the buzzword for many new recipes. Yes, it can be healthier and better for you if you eat too many carbohydrates. I created this recipe for that main purpose. Lower in sugar and healthier with the added benefit of walnuts. Fluffy and delicious just like the one that is cloaked with bad fats, sugar, and gluten. Give it a try even if you are not big on gluten-free and see just how moist and delicious it is!
2 cups Almond Flour
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 tablespoons or 30 grams gluten-free, or gluten sourdough biga
3 bananas, mashed
1/4 cup coconut cream
3 tablespoons maple syrup, or other sugar you prefer
3 large eggs
In a large bowl add all the dry ingredients. In a separate bowl add the wet ingredients and mix well. Add the wet ingredients to the dry and mix with a whisk or mixer on medium speed until all the ingredients are combined. Pour into a greased loaf pan and bake at 375 degrees for 40 minutes. Check doneness with a toothpick, making sure it comes out clean. Cool in pan for 30 minutes, then remove and cool for another hour before cutting. Enjoy
