No need to blend many different flours as most recipes call for. Go to GF Jules multi-purpose flour and find many different ideas using their flour. You will see that the recipe calls for xanthan gum, it is used to help bind and add strength and elasticity to the dough. 4 large eggs
2 tablespoons melted butter
1 1/4 cups lukewarm milk
1 cup GF multi-purpose flour
1/4 teaspoon xanthan gum

For dairy free version: substitute desired nut milk for the milk and add an extra egg white.
Preheat the oven to 400 degrees. Grease popover pan or muffin pan. Whisk the eggs, butter, and milk in a large bowl. Ina a separate bowl, whisk the flour with the xanthan gum and salt, then gradually sift and whisk into the liquid ingredients until you have a smooth batter. Pour the batter into the greased cups 2/3 full.
Bake for 25 minutes, then reduce the oven heat to 350 degrees for an additional 15 minutes, until the popovers are a deep brown. Remove from oven, let the sit for 5 minutes, then remove from the pan and serve immediately.
