16 oz can of diced tomatoes
2 tablespoons olive oil
3 cloves of minced garlic
1 anchovy (optional)
Salt and pepper to taste
Heat a saucepan on medium, and add the olive oil. Turn heat to medium-low, add the garlic and anchovy. As the anchovy heats smash it and break it apart with the back of a spoon. Next, add the tomatoes carefully, and have a lid ready to go to top the sauce if it gets too rowdy. Cook the sauce on medium-high heat, using the back of a spoon to smash the tomato pieces as they cook. Continue cooking until the liquid is gone and you have a thick paste. Season with salt and pepper to taste. Cool and you are ready to make your pizzas. This recipe will top two 12″ pizzas.
